COMPOST

Substrate

Our substrate is made of hardwood sawdust, water and grain by-product. We pasteurize an average of 2000 lbs. of substrate weekly, with a large steam heated tank.

Inoculation

In this step we add mycleium to the prepared substrate.  Inoculation is a labor intensive step during which the correlating mushroom “spawn”  is added to each mushroom block and hand mixed.

Incubation

Incubation is the process of mycelial growth. During the incubation stage of growth the mushroom block needs to sit in a stable temperature environment for the mycelium to grow out until it is ready to enter the “fruiting” stage.

Fruiting

Once the mycelium blocks have reached the “initiation stage” they are ready to form into fruit (mushrooms!). They are moved into the growing space, an environment that provides steady airflow, humidity and temperature.

The “pins” develop quickly into mature mushrooms, usually ready to harvest in 5 - 10 days after “pins” emerge depending on the variety.

Harvest

The fresh mushrooms  are then harvested and stored in a walk-in refrigerator until sold. This year we expect to produce approximately 12,000 lbs. of fresh mushrooms.

Compost

After the mushroom blocks have finished producing harvest they are all composted. Completing their cycle by transforming into rich compost, packed with beneficial fungal and bacterial life.
